I think one of the beautiful things about a frittata is that it falls into the ‘casserole’ family – which means you can make it the day before and it’ll still be good (some would argue even better). And sopressata is simply a dry Italian salami – so if you don’t have it use any salami. But just make it, it’s really good.

Won ton wrappers are essentially a blank canvas for whatever you put in them. And in this case it’s ricotta, cream cheese and spinach. Simple and delicious, just the way it should be.  You can find the recipe here.  But more importantly we would like to dedicate this episode to our friend Myrt Cox who passed away recently. She was a loyal fan who delighted in giving us just the right amount of trouble (I was going to say shit but I didn’t want to swear). She was delightful and will definitely be missed.
