Chopped kale, roasted corn, zippy vinaigrette, creamy avocado, crispy bacon, and a whole bunch of vitamins or something. This is what this kale salad is and it is delicious. Don’t let bad reputation of kale fool you. It’s much more than a decoration.

The Cooking Competition is heating up and our final preliminary round is tonight. Don traveled all the way from Stockton, CA to compete and Beth is the local San Diego sweetheart who wants to win it all. Strangely enough, no one has done a beef dish until now and tonight we have one from each competitor! Watch to see who wins and takes our fourth and final spot in the semis.

The Cooking Competition has not disappointed so far and it most certainly will not disappoint tonight. Right from the moment they walked in the door, Heather and Denice brought it all. Their outgoing personality and delicious recipes really made Round C an amazing experience. Oh and speaking cooking competitions, we view Lynn’s Masterchef Season 2 audition tape… oh snap.

We’re going to make a dish that is going to blow your face away and educate you at the same time. Not only are seared scallops so easy to do but drizzling a reduced ponzu sauce over the top and garnishing it with some finger limes will throw this dish way over the top. Finger limes are a strange cousin of the actual lime and they have an interesting interior resembling a cluster of fish eggs. When you bite into them, you get a refreshing pop of citrus and tart which go great with the citrus-y ponzu and sweet scallops.
